4 large bell peppers (any color)
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1 cup cooked, shredded chicken
1 cup cooked white rice
1 (10.5 ounce) can cream of chicken soup
1/2 cup sour cream
1 cup shredded cheddar cheese, divided
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves cut-side up in the prepared baking dish.
Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes. Add the minced garlic and cook for 1 minute more.
In a large bowl, combine the cooked onion and garlic mixture, shredded chicken, cooked rice, cream of chicken soup, sour cream, 1/2 cup of the shredded cheese, salt, and pepper. Mix well until everything is evenly combined.
Spoon the chicken mixture evenly into the hollowed-out bell pepper halves.
Cover the baking dish loosely with aluminum foil.
Bake for 30 minutes.
Remove the foil, sprinkle the remaining 1/2 cup of cheese over the tops of the peppers, and bake uncovered for another 10 to 15 minutes, or until the cheese is melted and bubbly and the peppers are tender.
Notes
You can use rotisserie chicken to save time.
If you prefer a less creamy filling, reduce the amount of cream of chicken soup by 1/4 cup and add 1/4 cup of chicken broth instead.
Prepare the filling ahead of time and store it in the refrigerator for up to 2 days before stuffing the peppers.
