1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 medium onion, chopped
2 cloves garlic, minced
1 (10.5 ounce) can condensed cream of chicken soup
1 cup chicken broth
1 cup uncooked long-grain white rice
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/4 cup milk (optional, for thinner sauce)
Instructions
Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
Add the chopped onion to the same skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Stir in the condensed cream of chicken soup, chicken broth, uncooked rice, Italian seasoning, salt, and pepper. Bring the mixture to a simmer. If you prefer a thinner sauce, stir in the milk now.
Return the browned chicken to the skillet, stirring to combine.
Cover the skillet tightly with an oven-safe lid or aluminum foil. Reduce the heat to low and cook for 18 to 20 minutes, or until the rice is tender and the liquid is absorbed. Do not lift the lid during this time.
Remove the skillet from the heat. Sprinkle the cheddar and Monterey Jack cheeses evenly over the top of the chicken and rice mixture.
Cover the skillet again and let it stand for 5 minutes to allow the cheese to melt completely. Serve directly from the skillet.
Notes
For best results, use a heavy-bottomed skillet that retains heat well.
If your skillet is not oven-safe, you can cover it with a tight-fitting lid on the stovetop for the rice cooking step.
You can substitute the chicken broth with water if needed, but broth adds more flavor.
