  • 1 medium onion, chopped
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 cup water
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 cups cooked white rice
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
  3. Stir the cream of mushroom soup, cream of chicken soup, water, parsley, garlic powder, and pepper into the skillet with the beef mixture. Cook, stirring until combined and heated through.
  4. Fold in the cooked rice and 1 cup of the shredded cheddar cheese until evenly distributed.
  5. Spread the beef and rice mixture into the prepared baking dish.
  6. Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.
  7. Bake for 25 to 30 minutes, or until the casserole is bubbly and the cheese topping is melted and lightly golden brown.
  8. Let the casserole rest for 5 minutes before serving.

  • For a make-ahead option, assemble the casserole completely, cover it tightly with foil, and refrigerate for up to 24 hours. Add 10 to 15 minutes to the baking time if baking directly from the refrigerator.
