- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg

- 1 cup vegetable oil
- 1 1/2 cups granulated sugar
- 1 cup packed light brown sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 3 cups grated carrots (about 1 pound)
- 1 cup chopped pecans or walnuts (optional)

- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a large bowl, whisk together the vegetable oil, granulated sugar, and brown sugar until combined.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- Fold in the grated carrots and chopped nuts, if using.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
- To make the frosting, beat the softened cream cheese and butter together until smooth.
- Gradually add the powdered sugar, mixing until smooth. Beat in the vanilla extract and lemon juice.
- Once the cakes are completely cool, frost and stack them.

- Use freshly grated carrots for the best moisture content.
- For extra flavor, add 1/2 cup crushed pineapple (drained well) to the batter.
