1 sleeve Ritz Crackers
1 cup packed brown sugar
1 cup (2 sticks) unsalted butter
12 ounces semi-sweet chocolate chips
Instructions
Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with aluminum foil or parchment paper.
Arrange the Ritz crackers in a single layer on the prepared baking sheet.
In a small saucepan, combine the butter and brown sugar. Heat over medium heat, stirring constantly until the mixture melts and comes to a full boil. Boil for exactly one minute without stirring after it starts boiling.
Immediately pour the hot caramel mixture evenly over the crackers, spreading it quickly to cover each cracker surface.
Bake for 4 to 5 minutes, or until the caramel is bubbly. Watch carefully to prevent burning.
Remove the baking sheet from the oven. Immediately sprinkle the chocolate chips evenly over the hot caramel layer. Let stand for 5 minutes to soften the chocolate.
Spread the melted chocolate evenly over the crackers using an offset spatula.
Place the baking sheet in the refrigerator for at least 1 hour, or until the chocolate is completely firm.
Break the sheet into individual cookies and store them in an airtight container.
Notes
For a Twix-like flavor, use milk chocolate instead of semi-sweet chocolate chips.
You can sprinkle coarse sea salt over the chocolate layer before chilling for extra saltiness.
If you prefer a less sweet cookie, reduce the boiling time of the caramel mixture to 45 seconds.
