1 pound fettuccine pasta
1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons Cajun seasoning
2 tablespoons olive oil
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup butter
2 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
Fresh parsley, chopped, for garnish
Instructions
Cook fettuccine according to package directions. Drain, reserving about 1 cup of pasta water.
While the pasta cooks, toss the chicken pieces with Cajun seasoning, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
In the same skillet, melt the butter over medium heat. Add minced garlic and red pepper flakes (if using) and cook until fragrant, about 1 minute.
Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until the sauce is smooth and slightly thickened.
Return the cooked chicken to the skillet. Add the cooked fettuccine to the skillet with the sauce.
Toss everything together until the pasta and chicken are well coated in the sauce. If the sauce is too thick, add a little reserved pasta water, a tablespoon at a time, until it reaches your desired consistency.
Season with salt and pepper to taste.
Serve immediately, garnished with fresh parsley.
Notes
For an extra kick, add more red pepper flakes.
You can substitute shrimp or sausage for chicken.
If you don’t have Cajun seasoning, you can make your own by combining paprika, cayenne pepper, garlic powder, onion powder, dried oregano, and dried thyme.
