Ingredients
Scale
1 pound boneless, skinless chicken breasts or tenders
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 cup milk or buttermilk
1 large egg
Vegetable oil, for frying
1/2 cup your favorite hot sauce (like Frank’s RedHot)
4 tablespoons unsalted butter, melted
1/4 cup Ranch dressing (plus more for drizzling)
4 large flour tortillas
1 cup shredded iceberg or romaine lettuce
1/2 cup shredded carrots
1/2 cup blue cheese crumbles (optional)
Instructions
Prepare the chicken: Cut chicken into bite-sized pieces if using breasts. In a shallow dish, mix flour, salt, pepper, and garlic powder. In a second dish, whisk the milk and egg. In a third dish, place the hot sauce.
Dredge the chicken: Dip each piece of chicken first into the flour mixture, shaking off excess. Then dip into the egg mixture, and finally coat again in the flour mixture for a thick crust.
Cook the chicken: Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until it reaches 350°F. Carefully fry the chicken in batches until golden brown and cooked through, about 4-6 minutes. Remove chicken and place on a paper towel-lined plate.
Make the buffalo sauce: In a small saucepan, combine the melted butter and hot sauce. Heat gently until combined.
Toss the chicken: Place the crispy chicken pieces in a bowl and pour the buffalo sauce over them. Toss until the chicken is fully coated.
Prepare the creamy slaw: In a small bowl, mix the Ranch dressing with the shredded lettuce and carrots.
Assemble the wraps: Warm the tortillas briefly in a dry skillet or microwave to make them pliable. Lay a tortilla flat. Place a portion of the sauced buffalo chicken down the center. Top with the creamy slaw mixture and blue cheese crumbles, if using.
Fold and serve: Fold in the sides of the tortilla, then roll tightly from the bottom up. Slice in half if desired and serve immediately.
Notes
For an extra kick, add a dash of cayenne pepper to your flour dredge.
If you prefer not to fry, you can bake or air fry the breaded chicken until cooked through, then toss in the sauce.
Use rotisserie chicken if you want an even quicker meal, skipping steps 1 through 3.
