  • 1 large head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup unsweetened almond milk (or other milk)
  • 1/2 cup buffalo sauce (your favorite brand)
  • 2 tablespoons melted butter (or vegan butter)
  • Optional: Ranch or blue cheese dressing for dipping

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, panko breadcrumbs, garlic powder, onion powder, salt, and pepper.
  3. In a separate bowl, whisk together the almond milk and melted butter.
  4. Dip each cauliflower floret into the milk mixture, then dredge it in the flour mixture, ensuring it’s well coated.
  5. Place the coated cauliflower florets on the prepared baking sheet in a single layer.
  6. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  7. While the cauliflower is baking, whisk together the buffalo sauce and melted butter in a small bowl.
  8. Once the cauliflower is done, transfer the crispy florets to a large bowl. Pour the buffalo sauce mixture over the cauliflower and toss gently to coat.
  9. Return the coated cauliflower to the baking sheet and bake for another 5-7 minutes, until the sauce is slightly caramelized.
  10. Serve immediately with your favorite dipping sauce.

Notes

  • For an extra kick, add a pinch of cayenne pepper to the flour mixture.
  • If you prefer a spicier sauce, use a hotter buffalo sauce or add a dash of hot sauce to the sauce mixture.
