Follow these steps to make perfectly crispy, sweet, and savory bacon using a simple brown sugar glaze baked in the oven.

  • 1 pound thick cut bacon
  • 1/2 cup packed brown sugar
  • 1 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Line a rimmed baking sheet with aluminum foil for easy cleanup. Place a wire cooling rack on top of the foil.
  3. Arrange the bacon strips in a single layer on the wire rack. Do not let the strips overlap.
  4. In a small bowl, mix the brown sugar, black pepper, and cayenne pepper, if using.
  5. Sprinkle the sugar mixture evenly over both sides of the bacon strips. Press the sugar lightly onto the bacon so it adheres.
  6. Bake for 15 to 20 minutes. Check the bacon at 15 minutes.
  7. If the bacon is not yet crispy or the glaze is not fully caramelized, continue baking for another 3 to 5 minutes. Watch closely to prevent burning.
  8. Remove the baking sheet from the oven. Let the bacon cool on the rack for 5 minutes before serving. The glaze will harden as it cools, making the bacon crispier.

Notes

  • Use thick cut bacon for the best texture when glazing. Thin bacon tends to burn quickly.
  • For extra stickiness, you can brush a thin layer of maple syrup over the bacon before applying the sugar mixture.
  • Drain excess grease from the pan halfway through cooking if you notice too much liquid accumulating under the rack.
