Make tender, old-fashioned blackberry dumplings cooked simply on the stovetop. This recipe yields soft dumplings swimming in a sweet, juicy blackberry syrup.

  • 4 cups fresh or frozen blackberries
  • 2 cups water
  • 1 cup granulated sugar, plus 2 tablespoons for topping
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • For the Dumplings:
  • 2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 4 tablespoons cold unsalted butter, cut into small pieces

Instructions

  1. Combine blackberries, water, 1 cup sugar, lemon juice, and 1/4 teaspoon salt in a large, heavy-bottomed pot or Dutch oven. Bring the mixture to a boil over medium-high heat, stirring gently. Reduce heat and simmer for 5 minutes.
  2. While the berries simmer, prepare the dumpling dough. In a medium bowl, whisk together the flour, 1 tablespoon sugar, baking powder, and 1/2 teaspoon salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Pour in the milk and stir just until a shaggy dough forms. Do not overmix.
  5. Drop the dumpling dough by rounded tablespoons directly onto the simmering blackberry mixture. Leave a little space between each dumpling.
  6. Cover the pot tightly and reduce the heat to low. Cook for 15 minutes without lifting the lid. The steam cooks the dumplings.
  7. After 15 minutes, remove the lid. The dumplings should be puffed and cooked through. Gently stir in the remaining 2 tablespoons of sugar.
  8. Serve the blackberry dumplings warm immediately, spooning the syrup over the top.

Notes

  • If using frozen blackberries, do not thaw them before adding them to the pot.
  • For extra richness, you can add 1/4 cup of heavy cream to the syrup just before serving.
  • If you prefer a thicker syrup, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the simmering berries during the last 5 minutes of cooking (before adding the dumplings).
