Ditch the individual baking and make this incredible Loaded Baked Potato Casserole. It is packed with sharp cheddar cheese and sour cream, baked until bubbly. This recipe is perfect for potlucks or as the ultimate side dish for your next gathering.

  • 3 lbs Russet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup sharp cheddar cheese, shredded, plus 1/2 cup for topping
  • 4 slices bacon, cooked and crumbled
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup green onions, sliced, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Place the sliced potatoes in a large bowl.
  3. In a medium saucepan, combine the heavy cream, milk, and butter over medium heat. Stir until the butter melts. Do not boil.
  4. Remove the cream mixture from the heat. Whisk in the softened cream cheese until smooth. Stir in the salt and pepper.
  5. Pour the cream mixture over the sliced potatoes and toss gently to coat every slice.
  6. Stir in 1 cup of the shredded cheddar cheese and the crumbled bacon into the potato mixture.
  7. Transfer the entire mixture into the prepared baking dish, spreading it into an even layer.
  8. Cover the dish tightly with aluminum foil.
  9. Bake for 45 minutes.
  10. Remove the foil and sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  11. Return the dish to the oven, uncovered, and bake for another 15 to 20 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
  12. Let the casserole rest for 10 minutes before serving. Garnish with sliced green onions.

Notes

  • You can make this casserole ahead of time. Assemble everything, cover, and refrigerate for up to 24 hours. Add about 15 minutes to the covered baking time if baking directly from the refrigerator.
  • For an extra crispy topping, substitute the final layer of cheddar with 1 cup of crushed buttery crackers mixed with 2 tablespoons of melted butter.
