Instructions
Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
In a separate medium bowl, whisk the melted butter, egg, milk, and vanilla extract until combined. If using, add the lemon zest here.
Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine. Overmixing develops gluten and creates tough muffins.
Gently fold in the blueberries. Use a light hand to prevent crushing the berries.
Prepare the crumble topping: In a small bowl, combine the flour and brown sugar for the topping. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
