Make moist, naturally sweet banana oatmeal muffins using just one bowl. This recipe is quick, healthy, and perfect for breakfast or meal prepping.

  • 3 very ripe medium bananas, mashed
  • 1/4 cup melted coconut oil or vegetable oil
  • 1/4 cup maple syrup (optional, omit for no added sugar)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups rolled oats (not instant)
  • 1/2 cup milk (dairy or non-dairy)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, mash the ripe bananas until mostly smooth.
  3. Add the melted oil, maple syrup (if using), and egg to the mashed bananas. Whisk until combined.
  4. Stir in the vanilla extract, baking soda, cinnamon, and salt until mixed into the wet ingredients.
  5. Add the rolled oats and milk to the bowl. Stir gently until just combined. Do not overmix.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For an egg-free version, substitute the egg with 1/4 cup applesauce or a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 5 minutes).
  • These muffins freeze well. Cool completely, then store in an airtight container in the freezer for up to 3 months.
  • If you prefer a thicker texture, let the batter sit for 5 minutes before scooping to allow the oats to absorb some moisture.
