A simple, one-pan recipe for creamy baked feta and cherry tomato pasta, based on the popular viral dish.

  • 1 (8 ounce) block of feta cheese
  • 2 pints cherry or grape tomatoes
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 12 ounces pasta (e.g., penne, rotini)
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Place the block of feta cheese in the center of a 9×13 inch baking dish.
  3. Arrange the cherry tomatoes around the feta cheese in the dish.
  4. Drizzle the olive oil over the tomatoes and feta.
  5. Sprinkle the minced garlic, dried oregano, and red pepper flakes (if using) over the tomatoes. Season everything lightly with salt and pepper.
  6. Bake for 30 to 35 minutes, or until the tomatoes have burst and the feta is soft and slightly browned.
  7. While the dish bakes, cook your pasta according to package directions until al dente. Reserve about 1 cup of the pasta cooking water before draining.
  8. Remove the baking dish from the oven. Mash the baked feta and tomatoes with a fork until a creamy sauce forms. Stir well to combine the oil and juices.
  9. Add the drained pasta to the baking dish and toss everything together until the pasta is fully coated in the sauce. Add small amounts of the reserved pasta water if the sauce seems too thick.
  10. Serve immediately, garnished with fresh basil if desired.

Notes

  • For a creamier texture, stir in 1/4 cup of heavy cream or a splash of milk after mashing the feta and tomatoes, before adding the pasta.
  • You can substitute cherry tomatoes with grape tomatoes or small heirloom tomatoes.
  • Use different herbs like thyme or rosemary instead of oregano for a flavor change.
  • If you do not have a 9×13 dish, use an oven-safe skillet large enough to hold the tomatoes around the feta.
