2 cups cooked, shredded chicken breast
1 large ripe avocado
1/4 cup finely chopped celery
1/4 cup finely chopped red onion
2 tablespoons fresh lime juice or lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh cilantro or parsley (optional)
Instructions
Place the shredded chicken in a medium mixing bowl.
Cut the avocado in half, remove the pit, and scoop the flesh into the bowl with the chicken.
Add the lime juice, Dijon mustard, garlic powder, salt, and pepper to the bowl.
Use a fork or potato masher to thoroughly mash the avocado and mix it into the chicken until the mixture is creamy and well combined.
Fold in the chopped celery, red onion, and cilantro or parsley, if using.
Taste the salad and adjust salt, pepper, or lime juice as needed.
Serve immediately or chill for later use.
Notes
For extra protein, stir in 2 tablespoons of plain Greek yogurt along with the avocado.
Serve this salad in lettuce cups for a low-carb option, on whole-grain crackers, or as a filling for wraps.
