  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 1/2 cups unsweetened applesauce
  • 1/2 cup chopped walnuts or pecans (optional)
  • For Cream Cheese Frosting: 4 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.
  3. In a large bowl, cream together the granulated sugar, brown sugar, and softened butter until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Stir in the applesauce until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Do not overmix.
  7. Fold in the chopped nuts, if using.
  8. Pour the batter into the prepared baking pan.
  9. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool completely in the pan before frosting.
  11. To make the frosting: Beat the softened cream cheese and butter together until smooth.
  12. Gradually add the powdered sugar and vanilla extract. Beat until the frosting is light and spreadable.
  13. Spread the frosting evenly over the cooled cake.

Notes

  • For a simpler topping, dust the cooled cake with powdered sugar instead of frosting.
  • You can substitute oil for butter in the cake batter for a slightly different texture, using 1/2 cup of vegetable oil.
  • This cake keeps well covered at room temperature for up to three days.
