  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 cups chopped peeled apples (about 6 medium)
  • 3/4 cup packed light brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 2 tablespoons unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Press about two-thirds of the dough evenly into the bottom of the prepared baking pan to form the crust.
  7. In a medium bowl, toss the chopped apples with brown sugar, flour, cinnamon, nutmeg, and allspice until evenly coated.
  8. Spread the apple mixture evenly over the crust.
  9. Dot the top of the apple layer with the small pieces of butter.
  10. Crumble the remaining one-third of the dough over the apple topping.
  11. Bake for 40-50 minutes, or until the topping is golden brown and the apples are tender.
  12. Let the bars cool completely in the pan before cutting into squares.

Notes

  • For extra warmth, you can add a pinch of ground ginger to the apple mixture.
  • Serve with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.
  • These bars are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 3 days.
