2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup sour cream
3 cups peeled, cored, and chopped apples (about 3 medium apples)
1/2 cup chopped pecans (optional)
For the Glaze: 1 cup packed brown sugar
1/2 cup unsalted butter
1/4 cup milk
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350 degrees F. Grease and flour a 10-inch tube pan or bundt pan.
In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then mix in the vanilla extract.
Alternate adding the dry ingredients and the sour cream to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
Gently fold in the chopped apples and pecans, if using.
Pour the batter into the prepared pan.
Bake for 50 to 60 minutes, or until a wooden pick inserted into the center comes out clean.
While the cake bakes, prepare the glaze. In a small saucepan, melt the brown sugar and butter over medium heat, stirring constantly.
Stir in the milk and bring the mixture to a boil. Boil for exactly one minute, stirring constantly. Remove from heat and stir in the vanilla extract.
When the cake is done, let it cool in the pan for 10 minutes.
Poke holes all over the top of the warm cake using a skewer or fork.
Pour the hot glaze evenly over the warm cake.
Let the cake cool completely in the pan before inverting it onto a serving plate.
Notes
Use firm, tart apples like Granny Smith for the best texture and flavor contrast.
If you do not have sour cream, you can substitute plain Greek yogurt.
Allow the glaze to set for at least 30 minutes before slicing the cake.
