1 cup all-purpose flour
2 large eggs
1 1/2 cups milk
1/2 teaspoon salt
1 tablespoon butter, melted
1 tablespoon granulated sugar
1/2 teaspoon cinnamon
1 apple, peeled, cored, and thinly sliced
2 tablespoons butter
2 tablespoons brown sugar
1/4 teaspoon cinnamon
Instructions
In a medium bowl, whisk together flour, eggs, milk, salt, melted butter, sugar, and cinnamon until smooth.
Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe.
Cook until lightly browned on one side, then flip and cook the other side until golden brown. Repeat with remaining batter.
While the crepes are cooking, melt 2 tablespoons of butter in a separate pan over medium heat.
Add the sliced apples, brown sugar, and cinnamon. Cook, stirring occasionally, until the apples are tender and caramelized.
Fill each crepe with the cooked apple mixture and fold or roll them.
Notes
For thinner crepes, add a little more milk to the batter.
You can add a pinch of nutmeg to the apple mixture for extra flavor.
Serve warm with a dusting of powdered sugar or a dollop of whipped cream.
