  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs
  • 1 cup apple cider
  • 1/4 cup sour cream or plain yogurt
  • 1 teaspoon vanilla extract
  • For the Topping:
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate medium bowl, whisk together the melted butter, eggs, apple cider, sour cream (or yogurt), and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  6. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  7. While the muffins are baking, prepare the topping. In a shallow bowl, combine the 1/2 cup sugar and 1 teaspoon cinnamon.
  8. Once the muffins are out of the oven, let them cool in the muffin tin for a few minutes.
  9. While the muffins are still warm, dip the tops into the melted butter, then generously coat them in the cinnamon-sugar mixture.
  10. Transfer the coated muffins to a wire rack to cool completely.

  • For an extra burst of apple flavor, you can add 1/2 cup of finely diced fresh apple to the batter.
