Instructions
Cut the zucchini into sticks about 1/4 inch thick. Place the sticks in a colander and sprinkle with salt. Let them sit for 15 minutes to draw out moisture, then pat them completely dry with paper towels.
Set up a breading station with three shallow dishes. Place flour in the first dish. Whisk the egg in the second dish. Mix the panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper in the third dish.
