Make restaurant-style potato wedges that are shatteringly crispy outside and perfectly fluffy inside using your air fryer. This easy recipe uses a simple soaking step for guaranteed crunch.

  • 2 large Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried parsley

Instructions

  1. Wash the potatoes well. Cut each potato lengthwise into 8 wedges.
  2. Place the cut wedges into a large bowl and cover completely with cold water. Let the potatoes soak for at least 30 minutes. This step removes excess starch and is key to achieving maximum crispiness.
  3. Drain the soaking water completely. Rinse the wedges under cold water.
  4. Dry the potato wedges thoroughly using paper towels or a clean kitchen cloth. You must remove as much surface moisture as possible for them to crisp up properly.
  5. In the same bowl, toss the dry wedges with olive oil until lightly coated.
  6. In a small bowl, mix together the salt, pepper, garlic powder, paprika, and parsley to create your seasoning blend.
  7. Sprinkle the seasoning mix over the oiled wedges and toss gently until they are evenly coated.
  8. Preheat your air fryer to 400°F (200°C).
  9. Place the seasoned wedges in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary.
  10. Air fry for 18 to 22 minutes, shaking the basket vigorously halfway through cooking (around the 10-minute mark), until the wedges are golden brown and shatteringly crisp.
  11. Remove from the air fryer and serve immediately. This is a great healthy french fry alternative!

Notes

  • For an extra savory flavor, try tossing the cooked wedges with 1 teaspoon of grated Parmesan cheese right after they come out of the air fryer.
  • If you want cheddar BBQ potato wedges, substitute the dry seasoning mix with 1 tablespoon of your favorite cheddar BBQ rub.
  • If your wedges are not as crispy as you like, return them to the air fryer for an additional 2-3 minutes at 400°F (200°C).
