1 cup all-purpose flour
2 large eggs, lightly beaten
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups sweetened shredded coconut
1/2 cup panko breadcrumbs (optional, for extra crunch)

Instructions
Prepare the shrimp: Pat the shrimp completely dry using paper towels. This helps the coating stick.
Set up the breading station: Place flour on one shallow plate. Whisk the eggs with salt and pepper on a second plate. Mix the shredded coconut and panko breadcrumbs (if using) on a third plate.
Coat the shrimp: Dredge each shrimp first in the flour, shaking off excess. Dip it into the egg mixture, letting excess drip off. Finally, press the shrimp firmly into the coconut mixture until fully coated.
Preheat the air fryer to 380 degrees Fahrenheit (195 degrees Celsius).
Arrange the coated shrimp in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary.
Lightly spray the tops of the shrimp with cooking spray.
Air fry for 8 to 10 minutes, flipping the shrimp halfway through the cooking time. The shrimp are done when the coating is golden brown and the shrimp are opaque.
While the shrimp cook, mix the sweet chili sauce and lime juice together in a small bowl for the dipping sauce.
Serve the hot coconut shrimp immediately with the dipping sauce.
Notes
For the crispiest result, ensure your shrimp are very dry before breading.
If you prefer a less sweet coating, use unsweetened coconut flakes and add 1 teaspoon of sugar to the coconut mixture.
If you use frozen shrimp, thaw them completely and pat them very dry before starting the breading process.
